Canned Tuna Requires No Preservatives for Preservation! High-Temperature Process Is the Secret Behind Its Long Shelf Life

When it comes to canned tuna, many consumers assume that large quantities of preservatives are added to achieve long-term storage. But is this really the case? Food industry experts dispel this misconception: properly manufactured, compliant canned tuna contains no added preservatives. Its long-lasting preservation relies fundamentally on commercial sterilisation via high-temperature and high-pressure processing.

The standard production sequence for canned tuna is as follows: raw materials are flash-frozen for preservation, cleaned to remove dark meat, pre-cooked for shaping, filled into cans, blended with brine or edible oil, vacuum-sealed, and then sent to sterilisation equipment. Under high temperature and high pressure, bacteria and spores inside the cans are thoroughly eliminated. The hermetically sealed cans prevent external microorganisms from entering, giving the finished product a shelf life of 2 to 3 years at ambient temperature.

Canned tuna chunk available on the market falls into three main categories: water-packed, oil-packed and flavoured variants. Water-packed tuna is low in fat and ideal for people on fat-loss diets. Oil-packed tuna, usually preserved in soybean oil or olive oil, delivers a milder texture and less fishy odour. Flavoured varieties such as tomato and spicy tuna offer richer flavours yet generally contain elevated sodium levels, so consumers should watch their salt intake when consuming these products.

Nutritionists note that high-temperature processing leads to partial loss of B‑group vitamins. Nevertheless, most key nutrients in tuna, including high-quality protein, DHA, EPA, selenium and vitamin D, are retained. It is a cost-effective source of deep-sea protein, suitable for salads, sandwiches and rice mixes. A handy purchasing tip: prioritise products with a short ingredient list that only contains tuna, water/edible oil and salt.
