Due to factors such as fish raw materials and production process management, there are certain safety hazards in canned fish products, mainly manifested as histamine sensitization of fish raw materials and botulism caused by improper sealing and sterilization. The canned food processing process must go through raw material processing, sorting, trimming, canning, sealing, sterilization, cooling and other processes. Like other foods, the processing environment, mechanical equipment, processing water, shaking materials and operators may become sources of microbial contamination.
Through field research, it was found that there are two links in the production of canned fish, from the entry of raw materials into the factory to sterilization and cooling, which are extremely susceptible to microbial contamination.
1. Food raw materials are often in contact with the external environment during production, processing, transportation and storage, and microorganisms in the external environment often invade food and cause food contamination.
2. During the canning process, the cleaned and disinfected raw materials should be canned as soon as possible, otherwise it is easy to cause contamination. In other words, if the sterilization or sealing process is not thorough, canned food is easy to rot and cannot be eaten.
Therefore, in addition to strictly controlling the selection, processing, and sterilization of raw materials, canned food companies must also disinfect and sterilize the raw material storage room, production workshop, and canning workshop, and keep canning and sealing in a sterile environment.
